JAPANESE GREEN TEA

Japan is now more than green tea produced in a wide range of price and quality. The plantations are mainly located on the islands of Kyushu and Shikoku. There are four crops of tea, ranging from mid-April to late September. The first (April-May) is the most sought because it is known to produce a more refined and less astringent tea as the following.
Sencha is three quarters of production. This is a tea plant characteristic flavor. It is deemed to retain shorter than Chinese green teas (no more than six months).
Bancha (meaning regular tea) is a lower quality sencha. It is prepared with leaves from the fourth, from the summer harvest and autumn. Though not lacking in character, its flavor is less delicate than sencha. It is also less rich in vitamins but most rich in anti-oxidants.
Genmaicha is a mixture of bancha and roasted rice grains (genmai). From genmaicha is prepared iced tea popular in Japan.
The Gyokuro is considered one of the best Japanese teas. It is obtained by covering them with tarpaulins tea straw two or three weeks before the first harvest. By "shading" and the plants, increasing the chlorophyll content of leaves, giving the drink a taste of typical and very soft algae.
The Hojicha is bancha whose leaves are roasted at 180 °.
The kukicha is a green tea made of twigs (Kuki), the less rich in caffeine of traditional teas.
Matcha is green tea reduced to very fine powder. It is mainly produced in Japan in the Aichi region. Unlike other teas, matcha will not brew but must be fought in hot water with a bamboo whisk (chasen on) to create an emulsion. This tea is used for the Japanese tea ceremony: chanoyu.
